Pirouette apple tree, also known as Rubinstep, produces attractive red-orange apples on a yellow background, with a slightly flattened shape reminiscent of a reinette apple.
The flesh is pale yellow, very crisp and juicy. The flavour is well balanced between sweetness and acidity, with a pronounced aromatic character.
Pirouette is mainly appreciated as a dessert apple, but it is also versatile in the kitchen. It can be eaten fresh, used in salads, cooked, baked in tarts or roasted.
Harvest takes place in autumn, generally from late September to mid-October depending on the climate and the year. The fruit stores well, allowing consumption into winter under good storage conditions.
Flowering is mid-season. Suitable pollinators include Golden Delicious, Granny Smith, Idared or other compatible apple varieties flowering at the same period.
The tree has medium growth and is productive, with early cropping and good yield potential.
Pirouette originates from Holovousy in the Czech Republic and is commercially associated with the name Rubinstep.
