Vilberie is a Breton bittersweet variety particularly valuable for adding structure to cider. Its juice is sweet, fruity, highly tannic and intensely astringent. The reliable tree has relatively frost-resistant blossom, making it useful in cooler European cider regions. We recommend it primarily for blending, as its strong bitterness and astringency can become excessively harsh when the variety is fermented on its own.
