Roquet Rouge is a local variety from the Boulonnais region, particularly valuable for late-season pressing. Its large, sweet, high-sugar and only slightly bitter apples can be stored and pressed between November and January. The tree is vigorous, hardy and a useful pollinator. We recommend it for adding density, potential alcohol and roundness rather than providing all the tannic structure of a blend.
