Discovered at Lemé in Thiérache, this local sour cherry is noticeably milder and more balanced than Montmorency. Its small vermilion fruit has tender yellow flesh with a light fragrance, particularly good in pies, preserves and fruit spirits. It is an appealing heritage choice for traditional sour-cherry flavour without excessive sharpness. The soft fruit does not store or travel well.
