Ivia is one of the yuzu selections I find most practical for actually producing fruit. The combination of larger fruit, good juice content, fewer seeds and relatively regular cropping makes it especially attractive for culinary use. I would still give it the warmest, most sheltered position available in colder parts of Europe.

Yuzu ‘Ivia’ is a Spanish selection of Citrus × junos associated with IVIA, the Valencian Institute for Agricultural Research.
Compared with many traditional yuzu selections, ‘Ivia’ is valued for relatively large fruit, a good juice yield and fewer seeds. The rough yellow rind is intensely aromatic, while the juice remains characteristically sharp but is often described as slightly sweeter and less austere than that of standard yuzu.
The fruit is mainly harvested from October into November, although it can remain on the tree later in mild climates. Both zest and juice are highly versatile in the kitchen, from sauces and marinades to preserves, baking and drinks.
The tree is vigorous, thorny and generally regular in production with relatively little alternate bearing. Mature size is usually around 3 to 5 m depending on rootstock and pruning. It is one of the hardier citrus choices and established trees are commonly reported to tolerate around -15 °C in a sheltered, well-drained position.
