Fuyu remains the benchmark non-astringent persimmon: it can be eaten crisp, allowed to soften or sliced into salads without any de-astringency treatment. The flattened fruit is mild, juicy and stores well. We would not describe it as an early cultivar, however. Where autumn warmth is limited, Hana Fuyu or a genuinely earlier selection is more dependable.
