The large flat-round Jacques Lebel apples are predominantly green, but often with an orange flush. They ripen over a period in late August / early September, and can be used immediately or stored until Christmas.

The flesh is light, with a juicy sweet / sharp acidity and a high vitamin C content.

Jacques Lebel is primarily a cooking apple, with a notably high pectin content. It is therefore ideal for jams and preserves, and the flesh breaks down quickly into a stiff puree. It can also be used in apple tarts, where the slices will soften but retain their shape. For best results for cooking we recommend the apples are picked slightly underripe, when they have the maximum juicy acidity.

History

This variety was developed around 1825 by Jacques Lebel, a nurseryman in the town of Amiens in northern France. It is still widely grown in the region.
