The large flat-round Jacques Lebel apples are predominantly green, but often with an orange flush. They ripen over a period in late August / early September, and can be used immediately or stored until Christmas.

The flesh is crisp, with a juicy sweet / sharp acidity and a high vitamin C content.

Jacques Lebel is primarily a cooking apple, with a notably high pectin content, and ideal for jams and preserves. It quickly renders down to a fluffy puree when heated.
